Nationwide

Nyama Choma

Slow-grilled goat or beef sold by the kilo and eaten with the hands.

The national social meal. Meat is salted simply and grilled over charcoal, carved at the table and served with ugali and kachumbari. It is ordered for the group, never per plate.

Ugali

Stiff maize-meal staple that accompanies almost every Kenyan meal.

Cooked from white maize flour and water until it holds shape, ugali is torn by hand and used to scoop stew or greens. Texture is a point of pride: it should be firm, never sticky.

A few things worth knowing

Nyama choma is a social event

Order by the kilo for the table, eat with your hands, and expect it to take an hour. It is not a quick meal.

The coast is a different cuisine

Swahili food — coconut, tamarind, cardamom, cinnamon — is a distinct tradition. Lamu and Mombasa's old towns are where to eat it.

Kibanda food is worth seeking out

A plate of chapo-beans or githeri in a local kibanda costs a fraction of a hotel meal and is often excellent.

Mursik is ceremonial

Fermented milk cured in a charcoal-lined gourd is a Kalenjin tradition. It is offered to returning athletes and honoured guests.

Pilau is an event dish

Spiced rice cooked for weddings, Eid and celebrations. Good pilau takes hours; if it arrives in ten minutes it is not the real thing.

Ugali anchors everything

Stiff maize-meal, torn by hand and used to scoop stew or greens. Texture is a point of pride — it should hold its shape.
